Hello,
I'm debating between purchasing the Epson 1280 (6 color) or the R1800 (8 color), for the purpose of sublimating. Any suggestions? Does the 8 color over the 6 color really make a difference? Would the ink last a little longer in an 8 color printer? Any additional info is greatly appreciated. Please advise. thanks.

There's no appreciable difference between the output of 6 and 8-color printers and that of 4-color printers, with regard to sublimation.
In the printing of photos on paper, yes. Even then, the differences are mainly in subtle transitions of color and shadows.
Even the well-trained eyes of longstanding sublimation suppliers are hard-pressed to discern the difference.
If you can swing it, my recommendation is the Epson 4000. It's an 8-color printer, which can be set up with 2 cartrides of each color - referred to as dual CMYK mode.
I don't know enough about the 1280 and R1800 printers to make a solid recommendation, but I say, the fewer colors of ink you have to buy, the better.
I guess I'm saying, between the two, the 1280 would be my choice. :-)

I would say the 1280 is a good choice.
I prefer the 980 printer which is 3 color with black. It made the best sublimation prints of any printer I have tried. So the number of colors does not automatically make a printer better. But the 980 could only print 8.5" paper.
The 1280 is a good solid printer with a long history. You can even pick up decent used 1280's.
